Pfeffernusse, German Peppernuts cookies

Here is a modified recipe to try again next year. I added pepper because it's supposed to have pepper. Increased flour by 1/4 c and decreased ground walnuts by 1/4 c. Dough was too sticky and ran flat when baked in oven.

About 10-15' @ 350F, on parchment paper lined pan. Cookies may be fragile when hot.

Blend together

  • 2.25 c. flour
  • 1 t. anise seed (ground)
  • 2 t. cinnamon
  • 1/2 t. baking soda
  • 1/2 t. ground cloves
  • 1/4 t. ground ginger
  • 1/4 t. ground nutmeg
  • 1/8 t. black pepper
Then add and put aside
  • 1.25 c ground walnuts
Beat until well blended
  • 1/2 c. butter melted
  • 1/2 c. sugar
  • 1/4 c. + 2 T. brown sugar
  • 2 T. molasses
Beat in
  • 2 eggs
Beat in
  • 1 t. grated lemon peel
  • 2 t. lemon juice
Gradually add flour mixture, beating well after each addition.

Roll into four 1" in diameter logs, Refrigerate 2 days for flavors to blend. Then put flattened rounds on cookie sheet and bake.

Optional Glaze (can dip cookies in it?)
  • 2.5 c powdered sugar
  • 3-4 T. hot water
  • 1/4 t. cardamon

I got this recipe from Our Wisconsin Magazine Dec/Jan 2023. It tastes very good but didn't work very well.
