12'/ 350 F, about 1 pan
Wisk together
- 1 1/4 c almond flour
- 1/4 c raisons (didn't have craisons)
- 1/2 c unsweetened coconut flakes
- 1/4 t baking soda (didn't have baking powder so added vinegar in wet ingredients)
- 1/4 t salt
- 1/3 c brown sugar
Wisk with fork each ingredient as added in separate bowl
- 1 large egg
- 3 T melted coconut oil
- 1/2 t vanilla extract
- 1/4 t vinegar
Blend wet and dry ingredients together.
Scoop out serving teaspoon, slightly flatten between 2 serving teaspoons and drop on cookie sheet.
A nice alternative to oatmeal raisin cookies.
