Gingerbread Cookies, soft, delicious!

12minutes@350F. Parchment lined cookie sheet. About 60-80 one-inch cookies

Pre-blend dry ingredients

  • 3 c. flour (I increased the flour because I like soft cookies)
  • 2 t. baking soda
  • 1 t. cinnamon
  • ½ t. dried ginger
  • ½ t. salt

Cream together

  • ¾ c. soft butter
  • ½ c. brown sugar
  • ½ c. white sugar

Then mix in

  • ¼ c. molasses
  • 2 T. water (might try adding as molasses next time but the flavor balance is very nice.)

Then mix in dry ingredients

Put in refrigerator overnight. Then shape into one-inch discs before baking.
